Cajun Butter Salmon

I am always looking for recipes that will help me reclaim my time! Although I enjoy getting fancy from time to time like the next gal, sometimes, especially during the summer, I just want a quick but flavorful  no fuss meal.

This 12 minute salmon is a huge hit in my house, even amongst some of the pickiest child critics. Throw some rice and a quick veggie together with this fish and viola, you’re in the game.

Ingredients:

  • 3-4 Salmon Filets 6oz
  • Salt & Pepper
  • 3 TB Butter
  • 2TB EVOO – divided
  • 2 TB Cajn Seasoning
  • 1 ts Old Bay
  • 1 TB Onion Powder
  • 1 ts Paprika
  • 1.5 TB Minced Garlic
  • 1 Lemon
  • *optional* parsley or chives garnish

Instructions:

  1. Preheat the oven to 350 degrees
  2. Rinse and pat dry your salmon filets
  3. Add 1 TB of evoo to a cast iron on nonstick skillet and turn on med high heat
  4. Score the salmon skins with 3-4 slits depending on size of filet.
  5. Lightly season both sides of fish salt and pepper (go easy on the salt if your cajun seasoning has salt in it)
  6. Sear your salmon skin down for about 3-4 for minutes, until the skin is a light golden brown and crispy
  7. Carefully flip to the other side to quickly sear the flesh about 1-2 minutes.
  8. Transfer pan into the oven and bake for 6-9 minutes depending on the level of doneness you prefer. (I like my salmon medium so I go for 6 minutes)
  9. While the salmon is in the oven, melt the butter and remaining oil in a saucepan on med low heat.
  10. Add in all of your seasonings and mix well stirring for about 1-2 minutes.
  11. Add in minced garlic and the juice from half of the lemon, stir
  12. When salmon is done spoon your garlic butter over both sides of the salmon and serve skin side up
  13. Garnish with fresh parsley and wedges cut from the other half of your lemon
